I make these ahead and wrap them in plastic
wrap and tote them to work. They heat up
quickly for a great breakfast sandwich.
Start by making a very small thin omelette in a fry pan the size of your tortilla. A little thicker than a crepe. Place your ham and cheese on the tortilla, then your egg omelette and roll it up. Tuck the ends in a bit and then place them in a hot lightly buttered fry pan to brown all sides and get the cheese melted. They can be warmed in a microwave later. YUM
