Spaghetti Wrapped Tortillas & Veggies

Here's what I started with from the leftovers:

I have cooked shredded chicken breast, minced garlic, chopped parsley, the last of my spinach leaves, shredded cheddar cheese, Olive oil, diced tomatoes, garlic salt, cooked brussel sprouts from last night's dinner (sliced and the outer leaves removed to reveal fresh color), some carrot curls not used up in our salads, leftover cooked spaghetti, sour cream, grated fresh parmesan, and some flour tortillas. These are 10" tortillas (large).
Now THAT ought to get me a good tasty wrap.
I started by cooking the chicken, minced garlic, and the carrot peels in about 2 Tbls. of olive oil on medium high. I wanted to get the carrots tender and the chicken browned a bit.


Then I tossed in the tomatoes and brussel sprouts, and seasoned with some garlic salt and pepper. I stirred it around rather gently to keep from breaking the brussel sprouts up. I cooked over medium low just to heat the tomatoes and the sprouts up.



The spaghetti went in last, tossing everything until it was well blended and heated through.



Now to prepare the tortillas.  I spread some sour cream on each tortilla staying about an inch away from the edges. I figured it would act as a glue as well as give the tortilla some moisture.  I didn't have a lot of spinach left, so I placed some of them on only one side of the tortillas, hoping it would add a contrast of color in the wrap as well as a good flavor.

Time to add the spaghetti filling.  Again, I tried to stay about an inch or so from the edge so it wouldn't spill out and I could fold the ends in after rolling it without much trouble.  I actually filled these a bit too full, next time I'll cut the amount down a bit.  I made sure each tortilla got a good portion of spaghetti and veggies mix. Then I sprinkled some of the cheddar and grated parmesan onto the filling.

The tortillas were then rolled up, tucking the ends in, and placed into a baking dish with seam side down.  They were a bit tough to roll up, because I had so much filling in them, but I got there.  They each got a good spinkling of cheddar cheese on top, and then into a 350 degree oven for about 20 minutes to heat through and melt the cheese.
I could only fit 4 into the baking dish, and I had just enough leftover filling to do one more wrap. I completed one and put it in a separate very small baking dish. (about 6" x 4") and put that in the oven too.



Out of the oven they come and they turned out just fine! I could have tucked the ends better...but again, too much filling.





The big test for me was to see if they could be held and eaten without falling apart or the filling dumping out all over when a bite was taken. To my delight, they held together very well, especially the odd one that had a little less filling in it.  I added a big dollop of sour cream to the plate and thoroughly enjoyed them.  The spaghetti had been originally cooked just before al dente, so adding it to the pan with the chicken etc. didn't overcook it to a "pasty" point.

  I just had to test it completely by getting Grand-girlie to try one and she really liked it.  Of course, after I told her there were brussel sprouts in it...she began the tedious task of picking them out.  (I should have said nothing. LOL)  Now I have other ideas for wraps, another day another time.  I wonder how it would be with some marinara sauce spread on the tortilla instead of sour cream?  Hmmm...
So, my experiment was a success....my belly is full...my blog entry is completed.  But...the yard still needs raking. {{sigh}} I guess I could take the midnight shift with the raccoons.  ;-)

It's Sunday, the weather this weekend has been tremendous for getting the spring yard work started....and the "in house" spring cleaning. **Groan**  So, I decided to start with the most needed, which was to clean the refrigerator top to bottom and inside and out.  A big mistake if I was going to do ANY yard work today, because of course.....I got side tracked when I took out some leftovers that I wanted to use up and my brain got to going... and the knives came out and the pots and pans... and baking dishes...and cookbooks...and ...well you know what happens from there if you are a chronic cook. ;-)
I came up with an idea to use up leftover spaghetti that didn't involve making a spaghetti pie using eggs and such.  Why not wrap it in a flour tortilla?  Throw some interesting leftover tidbits in there, add some sour cream and cheese?...So I gave it a shot. An excusable reasoning for not raking those leaves if there ever was one.  :-)
