and first up is one of my absolute favorite quick and easy snacks. I always keep a package of flour tortillas in my kitchen, and some shredded cheddar cheese...and of course the sour cream. When I've had a really long tough day and have no inclination to cook anything too involved, I opt for the 'ol stand-by grilled cheese quesadilla. If I'm at least somewhat awake, I'll add things to these such as shredded cooked chicken breast or other ingredients. My favorite way lately is to just add caramelized onions and some chopped basil. So yummy!
Yes, I know that a true quesadilla is folded over....but it looks like quesadillas when finished. :-)

Cheese & Caramelized Onion Quesadilla
The main players:
1 1/2 C. shredded cheddar cheese (or whatever cheese you favor)
2 Large flour tortillas
4-5 leaves chopped basil
1/4 C. caramalized onions
1 Tbs. butter
1/4 C. Sour cream
Start heating up your griddle or flat pan on Med. Heat.
On a large plate, lay one of the tortillas down and spread the cheese and the basil on the top, trying to get close to the edges but leaving about 1/4".
Now place your caramelized onions on top, spreading around so there are some in each bite.
Add the butter to the griddle and let it melt, spreading it around to cover the area large enough for the tortilla.
Now carefully lift your tortilla by the left and right edges and transfer it to the pan.
Place the other tortilla on top.
You will want to watch the bottom of the tortilla to be sure it doesn't get too brown. This only takes a couple of minutes. Lift the edge of the top to be sure the cheese is melted on the edges. You will need the cheese melted in order to be able to flip this, otherwise you will have cheese everywhere. (Ask me how I know this...LOL)
With large spatula under the tortilla, flip it using your free hand to gently hold the top. Do it fairly quickly. Cook for a couple more minutes, checking the bottom. When lightly browned slide it onto a serving plate.
Use a sharp knife to cut into pie wedges and arrange them so there is a space in the center of the plate. Dollop a generous amount of sour cream with some chopped basil in the center.
