MARINATED SALMON BITES
marinated Salmon Bites
I had a family card party planned at my house recently, and sometimes we all decide to bring something up to snack on while we play.  I decided to pull out some Salmon fillets from the freezer and make something snack worthy with it.  I came up with a tasty marinade concoction and served it on a platter cut into bite size pieces with some of the marinade cooked down into a thin sauce.  It was a hit.  There was literally not a piece of salmon left on the plate.  This goes well on some nice crackers too, just small enough bites to top one. 
Meet the Salmon Bites team:

4-5 Salmon fillets
1/4 C. white wine of your choice
1/4 C. Soy sauce
4 Tbs Honey
3 cloves minced garlic
Juice of 1/2 a lemon
1/4 tsp. grated ginger
Lemon pepper (optional)


Whisk together all of the ingredients until well blended.
Add your fillets to the baking dish and be sure they are all sitting in the marinade.
I used a turkey baster to get the marinade onto the top of the fillets and then sprinkled some lemon pepper on top.
Now cover and put in the refrigerator for about 1/2 hour. I turned them once and basted again.
Cover the baking dish with foil and bake the fillets in the marinade at 350 degrees for about 15 minutes.  Salmon fillets will generally take about 10 minutes per inch of thickness to cook. We like ours a little more done, but not so much as to dry it out. It should be flaky, but not mushy. When they are done, remove them from the baking dish and put them on a plate.
Some people say not to bake the salmon in the marinade. I saw no problem with it at all.
I poured the leftover marinade from the baking dish into a small saucepan and heated it to simmering. Then I added a tsp. of cornstarch dissolved in a little water and added it to the sauce. 
I let it cook down a little while whisking to make the sauce thicker.

Now slice the fillets into bite size pieces and arrange on a platter with a couple wedges of lemon.
I grated some lemon zest onto it and some fresh ginger.  Then I drizzled some of the sauce down the middle of the pieces.
This stayed tasty even when it was cold. Enjoy
