This is a recipe that I'm sure everyone has a version of passed down or created on their own.  Mine is filled with a few of our favorite ingredients and it is incredibly easy to make.  It will serve 4-6 people, but be prepared for those "seconds".  It is tasty! Use your own favorites, change the cheese type...anything you like. Try it with cooked chicken  breast shredded up too!
Baked Tuna and Cheddar Casserole
Up on stage are the following ingredients:

1 medium to large buttered baking dish
2  cans of chunk tuna (6 1/2 oz. cans) drained
3/4 C. frozen or fresh peas
1 to 1 1/2 C. Cheddar cheese (Shredded)
1/2 C. Sour Cream
1/4 C. Mayonnaise or Salad dressing
2 tsp. mustard (I used one tsp regular and 1 Dijon)
2 C. wide noodle pasta
1/4 tsp. thyme
1/4 C. chopped parsley (reserve 2 or 3 leaves)
1/4 C. Chopped Celery
1/4 cup Chopped or sliced green onions
Salt & Pepper to taste
1 small tomato chopped

Pre-heat Oven to 350 degrees


Start by boiling the pasta to just undercooked. It will cook more in the oven.  Drain the pasta, but do not rinse it.
Now mix the ingredients in with the pasta starting with the tuna, peas, onions, thyme, and celery.
Mix those up well and then add the sour cream, mayo, mustard and mix thoroughly to blend them in. Season with salt and pepper too.
Add half of the pasta mixture to the baking dish. Top with half of the cheese and chopped parsley.
Add the rest of the pasta mixture and top with the remaining cheese and parsley.
Place it in the oven and bake for 30 minutes or till cheese is melted and bubbly.
Sprinkle on the tomatoes and garnish with the reserved parsley leaves and serve.
